Joel's Birthday Weekend

We had such a nice weekend celebrating Joel's birthday! We hung out at home, went to Red Lobster for dinner, attended a Bison men's basketball game, and had a birthday meal at home too.


Birthday meal at our house on Sunday - it was great to have Joel's parents celebrate with us!


Joel requested beef wellington for his birthday meal. I had never made it before or worked with puffed pastry, but honestly it wasn't as difficult as it sounds! I used a Rachael Ray recipe that made it fairly simple - basically you put steaks, cheese & greens onto puffed pastry, wrap it up, and bake it in the oven.


I had to take a photo right after they came out of the oven. YUM!


I definitely want to try making this again. I need some more practice with rolling out the puffed pastry so it is thinner, but I'm sure Joel won't mind testing it out!

Joel's Mom made a poppyseed birthday cake with her famous cream cheese frosting. Seriously, it is the best frosting ever! CJ loved decorating the cake with sprinkles.
